Design

Although it’s a sturdy device that looks very solid, the Chef’sChoice 1520 AngleSelect only measures 12 x 6 x 6 inches and weighs around 3 pounds. The versatile design makes it easy to match to any kitchen style, offering you the choices of brushed-stainless-steel, black, and white housings. The stability is ensured by rubber feet that make sure the unit doesn’t slide during use.

Performance

What is impressive about this knife sharpener is its ability to handle any type of knives, including Asian, straight-edged, and serrated ones of all sizes. The two separated diamond slots have a 20-degree angle for the European knives and a 15-degree angle for the Asian ones, so the sharpening is performed in perfect conditions. The operating mode is a three-stage process that implies using the first and third stage for sharpening at 15 degrees and the second and third for the 20-degree knives. Stage three is solely used for sharpening serrated knives.

Ease of use

The versatility and quality of this product make it very easy and safe to use, with optimal control over the knife and effortless precision in sharpening withing seconds. The angles provide accurate control of the blade so you will manage to sharpen the blades evenly on both sides. The advanced spring guide on the Chef’sChoice 1520 AngleSelect allows you to sharpen any type of knife, from pocket knives to cleavers.
The maintenance implies wiping the unit with a damp cloth and there is no need for using honing oil or water. Avoid sharpening scissors or blades that don’t fit freely in the unit and always sharpen serrated knives in the third stage in order to keep the sharpener running smoothly.
Do not use with honing oil or water. Use only on clean knives. Do not use for scissors or any blades that do not fit freely in the slots. Serrated blades should only be used in stage three. Care Wipe exterior with a damp cloth.

Warranty and support

When you spend this much on a knife sharpener, you want it to be durable and reliable, and these two qualities are found in the Chef’sChoice 1520 AngleSelect. With a 3-year warranty, you can use your unit with peace of mind and you can rely on its performance much more than that. The positive customer reviews it has received make it a top choice for those looking for a quality knife sharpener. For added convenience, you will receive customer support and all the details can be found on the manufacturer’s website.

You say the sharpener is great for so many knives. Can the device also sharpen ceramic knives?

    • Maxwell Sheridan says:

Hi, Thomas. The manufacturer doesn’t mention this aspect but usually, it’s recommended to shape a ceramic knife into a diamond sharpener. The Chef’sChoice 1520 AngleSelect features two separated diamond slots, so it may also work for ceramic knives.
